Potato salad(refrigerate 4 days)

This easy preparing potato salad is good both hot and chilled.

<Ingredients>

3 Medium size potatoes

2 Caroots

3 Asparagus(option)

<Seasonings>

3 pinches Salt

Pepper

Basic dressing

<Instruction>

1. Cut potatoes in bite size with skin and soak in water for 5-10 minutes.

2. Drain water from potatoes and put them on a plate with carrots cut in bite size, cover with plastic foil and cook in the microwave for 8-10 minutes until cooked throughly.

3. Cut asparagus in 1 inch long and cook in the microwave for 1 minute then cool them in water.

4. Salt and pepper potatoes, carrots and asparagus.  Pour dressings and mix well.

I like small potatoes with skin.  Leave skin on carrots too, they have nutrition.
